Ana Mustafa, a progressive producer, is known for her innovative approach to specialty coffee. She has developed an experimental coffee process known as the 'fed-batch' technique. Here's how it works: the coffee cherries are separated into batches by harvest day. The first batch is left to marinate for 24 hours before undergoing a meticulous fermentation process. Then, the second batch joins the party, providing fuel for the bacteria in the first batch, resulting in a prolonged fermentation process that brings out fruity, almost sparkling flavors in the coffee.
