Let me tell you about the incredible work happening at the LaREB cooperative, spearheaded by Ana Mustafa and her dedicated team. Their mission is clear: to uplift smaller or less experienced coffee farmers by providing them with invaluable production advice and ensuring professional quality control.
By exporting coffee directly from the farmers, LaREB secures the supply chain and ensures that producers receive fair compensation for their hard work. Ana's commitment to LaREB shines through—her coffees contribute significantly to the cooperative's success, both financially and in terms of coffee production.
Sugar Cane Decaffeination Process:
Now, let's dive into the fascinating world of sugar cane decaffeination. It's often hailed as a natural process decaf, and for good reason! Ethyl acetate, a naturally occurring compound found in fruits like ripe bananas and in beer fermentation, plays a key role in this process. In Colombia, we utilize ethyl acetate sourced from fermented sugarcane in Palmira, combined with water from the majestic Navado el Ruis volcano. The magic begins with steaming the coffee beans, increasing their porosity and kickstarting the caffeine removal process. These beans take a dip in an ethyl acetate solvent until 97% of the caffeine bids adieu.
A final steam bath lifts any residual traces of the compound, leaving behind a residue level that's significantly lower than that of a banana—talk about a clean cup of decaf!
